Thanksgiving Recipes Part 2- Pie

Everyone in the family usually brings a pie or two, so we end up with quite the buffet of dessert choices. I always do pecan & will be doing apple this year as well. I usually use the Martha Stewart pie crust recipe, but this year, I'm taking the easy way out and relying on Pillsbury.

Pecan Pie
From Gerrie Dowdle

3/4 cup pecans
1 pie shell
3 eggs, well beaten
1 cup dark corn syrup
1/2 cup sugar
1/2 t. salt
1/2 t. cinnamon
1 t. vanilla
1 t. flour
1/4 cup melted butter

Combine ingredients and pour into uncooked pie shell. Top with pecans (whole look better). Bake at 375 for 35 to 40 minutes until the center is set.



French Apple Pie

You can use your favorite pie crust recipe or prepared pie shell.

Filling:
4 – 5 granny smith apples (peeled and thinly sliced)
¾ c. sugar
¼ t. nutmeg
1 t. cinnamon
1 ½ T. butter (chilled, cut in little pieces)

1- Combine sugar, cinnamon and nutmeg. Toss with apples.
2- Pour apples in uncooked pie shell and top with dots of butter.

Topping
¾ c. flour
½ c. brown sugar
¾ c. oats
1 t. lemon zest
½ c. butter

1- Combine all topping ingredients with a pastry blender until crumbly. Sprinkle over the top of the apples.
2- Bake at 375 degrees for 45 – 55 minutes until golden brown and apples are tender.
3- Serve warm topped with vanilla ice cream.

Thanksgiving Recipes Part 1- Homemade Rolls

In our family, the rolls have to be homemade and hot from the oven. This is the family recipe that I grew up on & the one that I will be making for our Thanksgiving dinner:

Homemade Rolls
1 c. shortening
3/4 cup sugar
2 t. salt
1 c. boiling water
2 T. yeast
1/2 c. lukewarm water
4 eggs
7 1/2 cups flour
1 c. cold water

Mix Shortening, sugar and salt. Add boiling water and stir until smooth and shortening is melted. Soften yeast in lukewarm water. Add to cooled shortening mixture. Add eggs. Add flour alternating with cold water. Mix well. Cover and refrigerate from 2 hours to 2 days. Turn dough out on lightly floured board. Roll out in desired shapes (I do crescent). Place on greased cookie sheet. Cover with damp towel. Allow to raise for 2-2 1/2 hours. Bake at 400 for 10 to 12 minutes. Makes about 4 dozen.

No More Diapers!

Well, at least we're down to only one kid in diapers. Joshua went all day today with no "accidents". This is huge for us. Couldn't be happier. This is Josh on his 1st day of preschool. How do they grow up so quickly!?

On another note, we went for a drive today to see what was left of the fall leaves. It was really beautiful, but when we got up high enough it turned to a winter wonderland. We have a very similar picture of Joshua behind the wheel when he was younger. Neil was ticked when we made him get back in his carseat.
